Plates | Crock Pot Thai Chicken

My grandma bought me a Slow Cooker cookbook for Christmas, and I've been wanting to try out some new recipes, so this was the perfect opportunity. After thumbing through the book, I decided to try out this Thai Chicken recipe. I'll admit that I was a little skeptical of the flavors, but it turned out really well!

Ingredients
1 cup hot salsa
1/4 cup peanut butter
1 squeezed lime, ~2 tbsp
1 tbsp soy sauce
1 tsp minced ginger
2 pounds of chicken
Cilantro
Crushed peanuts

Directions
1. Mix the first 5 ingredients in a bowl to create the sauce
2. Put the chicken in the crock pot (I always put in some olive oil)
3. Top with sauce and cook on low for 6-7 hours.
4. I shredded the chicken since it was just falling apart
5. Top with crushed peanuts and cilantro if desired

I served this with rice and sugar snap peas--so tasty!
