Merry Christmas, Merry Christmas! This is a wonderful day in the Brown household. Presents, a shining sun, and 2 breakfasts. Yes, you read that correctly. One breakfast while opening presents, and one sit down breakfast. The first breakfast consists of hot chocolate and cinnamon rolls made by one of our neighbors.
For the second breakfast, my mom usually experiments with different recipes/ideas, and this year, she made chilaquiles. DELICIOUS! You could easily throw these together for a great brunch.
Here's how to make them!
Ingredients
- Thick tortilla chips
- Enchilada sauce (you can add some spices to this)
- Bacon or other breakfast meat
- Queso fresco
- Salsa
- Sour Cream
- Fried egg
- Avocado
Heat the enchilada sauce in a large sauce pan. Add desired spices. Shortly before serving, dunk the chips in the sauce. This is the base. From there, it's simple. Add the egg, bacon, and the rest of the topipngs. You can really customize this dish.
