Plates | Zucchini Lasagna

After a lot of traveling and eating out, I am excited to return to home cooked meals. I recently moved apartments and now have an oven, so the first thing I wanted to make was an oven dish--lasagna!

In an effort to be healthier, I substituted zucchini for the pasta and ground turkey for beef.

Layer 1--Tomato Sauce
Layer 2--cooked ground turkey seasoned with Italian seasonings
Layer 3--Thinly sliced zucchini
Layer 4--Ricotta cheese whipped with an egg and Italian seasonings
Layer 5--Mozzarella cheese

Repeat these layers one more time.

Cook at 350 for 45 minutes or so, or until the cheese on top starts to brown. Delicious! Served with a salad and wine!
