Plates | Chicken "Crab Cakes"

Sometimes I’ll throw a few chicken breasts in the crockpot at the beginning of the week, not necessarily knowing how I’ll use the chicken. I had leftovers and decided to make this pseudo crab cake, and it was so delicious!



Ingredients
Chicken Cakes
2 chicken breasts, cooked, shredded
2 tbsp chopped green bell pepper
1 1/2 tbsp Greek yogurt
2 chopped green onions
1 egg, beaten
1 cup panko, divided

Salad
Lettuce and red cabbage
Avocado, diced
Dressing: 2 tbsps olive oil, 1 tsp honey, juice of 1/2 lemon, salt & pepper

Yogurt sauce
1/2 cup yogurt, juice of 1/2 lemon, pinch of garlic, dill

Directions
Combine all ingredients for the chicken cakes up through the egg. Add in 1/4 cup of the panko and mix together.
Divide this mixture into 6-8 patties of equal size. Dip the patties in the remaining panko crumbs and cook in a pan (with a drizzle of olive oil) until each side is browned.
Serve the crab cakes with a side salad and yogurt sauce.
