Plates | Avocado Corn Chowder


This is a dish that can be served hot or cold. I personally love meals that are served in bowls--you can hold them to get warm on cold days, and sip straight from the edge. This dish could make an easy transition to summer, too!


Ingredients
2 avocados
1 1/2 cup water
Salt and pepper
Chili powder
Chicken breast
1 red bell pepper
1 can of sweet corn

Directions

Cook chicken breast with salt and pepper
In a blender, place 1 chopped avocado, 1 1/2 cup water, salt and pepper and cayenne.
Move blended mixture to the pan with the chicken, and add in the chopped red bell pepper, sweet corn.
Heat long enough just to warm the soup (if serving warm), and top with the second diced avocado.
If serving cold, place avocado mixture in the freezer while chicken finishes cooking, and add all the components together.
