Potato, Sausage & Spinach Bake


½ Large Yellow Onion
2 regular potatoes, 1 sweet potato (or any combo)
Bag of spinach
4 links of Italian or Hot Sausage, already cooked
Cheddar Cheese, sliced thinly
1 large bulky roll
5 eggs
21 Seasoning Salute (from Trader Joe’s), or garlic and oregano
Hot Sauce optional

Preheat oven to 400 degrees. Grease a 9x13 pan.
Dice an onion and saute for a few minutes until soft. Add to the pan.
Poke holes in the potatoes, wrap them in damp paper towels, and microwave each for 5-6 minutes until tender. Cut into small bite sized pieces. Add to pan.
Dice the sausage links and add to the pan.
Drizzle olive oil over the ingredients in the pan and sprinkle seasoning generously.
Lay a thin bed of spinach over the potatoes, intersperse with sliced cheddar cheese, and ripped pieces of the bulky roll.
Beat the 5 eggs in a bowl and drizzle over the whole pan.
Cover the pan with aluminum foil and bake for 25 minutes. Remove aluminum foil and bake 8-10 minutes until the bread starts to crisp up on top. Remove and serve warm. Hot sauce optional.

Serves 4-6.
